  • Use cooking utensils of medium weight aluminum with tight fitting lids, and flat bottoms that completely cover the heated portion of the surface unit.
  • Cook fresh vegetables with a minimum amount of water in a covered pan.
  • Watch foods when bringing them quickly to cooking temperatures at High heat. When food reaches cooking temperature, reduce heat to lowest setting that will keep it cooking.
  • Use residual heat with surface cooking when possible. For example: when cooking hard boiled eggs, bring water to a boil then turn the control to the OFF position to finish cooking.
  • Always turn the surface unit OFF before removing pan.
  • Use correct heat for task.
    • High - to start cooking (if time allows, do not use high heat to start)
    • Medium High - quick browning
    • Medium - slow frying
    • Low - finish cooking most items, simmer, double boiler cooking.
  • When boiling water for tea or coffee, heat only the amount needed.
