Range & Wall Oven - Oven Temperature Fluctuation / Cycling On and Off

Both gas and electric ovens will cycle on and off throughout the cooking cycle to maintain the set temperature. When the oven temperature has dropped below the set temperature, the oven cycles on again to provide heat and will cycle off again once the temperature is higher than the set temperature. The goal is to maintain an average set temperature. However, you will see a normal swing in temperatures above and below the set oven temperature throughout the cooking cycle. This is typical of ovens and is factored into how recipes are created and used.

 

The oven temperature fluctuation varies by model and each individual oven can be different.

 

  • The temperature range can vary by + 30 degrees and – 30 degrees as the oven cycles on and off for a total temperature fluctuation of 60 degrees.
  • This fluctuation is common for our ovens. Some may fluctuate a little more, some a little less.
  • The temperature swing can vary by how and where you are measuring the temperature in the oven.
  • The temperature swing can also be influenced by the room temperature or number of door openings.
