Range and Wall Oven - Pizza Mode

The Pizza Mode on double-oven free-standing ranges and Twin Flex wall ovens provides ideal cooking conditions for preparing fresh or frozen pizzas at the touch of a button.

The Pizza mode utilizes:

  • Preheat
  • Temperature
  • Use of bake and broil elements
  • Top browning
  • Bottom of crust

Why Different Settings for Fresh or Frozen?To get excellent results fresh and frozen pizzas they must be cooked differently. There is not a specific temperature associated with the Pizza Mode. You actually input a temperature for fresh or frozen pizza.  The different settings affects preheat prepping the oven for cooking, and the different pizza setting controls the cycling of bake and broil element on and off to deliver optimum results. the amount of top and bottom heating is different for the 2 different modes.

FreshFresh goes into the oven at approx 40 degrees (refrigerator temp) frozen goes in at 0 degrees. Fresh pizza should be cooked on rack position 2 to deliver the crisp pizzeria crust.

FrozenFrozen pizzas have ingredients that have be precooked or partially cooked. Frozen pizzas (on rack) should be cooked on rack position 1 or 2, and frozen pizzas (in pan) should be cooked on rack position 1 to prevent over cooking the crust while toppings are not yet done.
