Baking at High Altitudes (Conventional and Convection Ovens)

Here are some general cooking information regarding baking at higher altitudes. 

UP-3000 FT

 
  • Keep the eggs refrigerated until ready for use and don't overbeat them
  • Increase the temperature 25 degrees

5000 FT

 
  • Reduce the baking powder and baking soda by 1/8-1/4 tsp. per tsp
  • Decrease the sugar by 1-2 tbsp. per cup
  • Increase the liquid 2-3 tbsp. per cup
  • Increase the oven temperature 25 degrees

7000 FT

 
  • Decrease the baking powder and baking soda 1/4 tsp. per tsp
  • Decrease the sugar by 2-3 tbsp. per cup
  • Increase the liquid by 3-4 tbsp. per cup
  • Increase the flour 1 tbsp. per cup
  • Increase the baking temperature 25 degrees.

10,000 FT

 
  • Add 1 extra egg
  • Decrease the baking powder and baking soda 1/4-1/2 tsp. per tsp
  • Decrease sugar 2-3 tbsp. per cup
  • Increase the liquid by 3-4 tbsp. per cup
  • Increase flour 1-2 tbsp. per cup
  • Increase the oven temperature 25 degrees
