Baking at High Altitudes (Conventional and Convection Ovens)
Here are some general cooking information regarding baking at higher altitudes.
UP-3000 FT
- Keep the eggs refrigerated until ready for use and don't overbeat them
- Increase the temperature 25 degrees
5000 FT
- Reduce the baking powder and baking soda by 1/8-1/4 tsp. per tsp
- Decrease the sugar by 1-2 tbsp. per cup
- Increase the liquid 2-3 tbsp. per cup
- Increase the oven temperature 25 degrees
7000 FT
- Decrease the baking powder and baking soda 1/4 tsp. per tsp
- Decrease the sugar by 2-3 tbsp. per cup
- Increase the liquid by 3-4 tbsp. per cup
- Increase the flour 1 tbsp. per cup
- Increase the baking temperature 25 degrees.
10,000 FT
- Add 1 extra egg
- Decrease the baking powder and baking soda 1/4-1/2 tsp. per tsp
- Decrease sugar 2-3 tbsp. per cup
- Increase the liquid by 3-4 tbsp. per cup
- Increase flour 1-2 tbsp. per cup
- Increase the oven temperature 25 degrees
