Standing Time of Meats After Cooking

Meats continue to cook slightly while standing after being removed from the oven. For rare or medium internal doneness, remove meat from the oven just before it is done. Let it stand 10 to 20 minutes before serving. If no standing time is planned, cook meat to suggested temperature and time.
