Preserving Vegetables in Refrigerator

Suggestions for preserving vegetables include the following:

 
  • Do not wash vegetables until you are ready to use them. The extra moisture can cause them to spoil in a few days.
  • Store leafy vegetables in a container with a lid or a self-seal plastic bag. Place a couple of paper towels in the container or bag to absorb moisture. (Replace the paper towels as they become damp and the vegetables will last longer.)
  • Paper towels can also be placed in the bottom of the vegetable bins to help keep them clean and collect moisture at the same time.
  • Keep the door and drawers closed to prevent humid air from entering the compartment.
  • Do not keep the cold control too low. That can pull moisture out of the vegetables, which is what causes them to become limp. (Often, placing soggy vegetables in a bowl of ice water can cause them to become firm again.)
