Advantium - Convection Baking
Convection baking in the Advantium allows you to cook foods the same way as a conventional oven, using an element to heat the air inside the oven. Any oven temperature from 250°F to 450°F may be set. A fan gently circulates heated air throughout the oven, over and around the food.
When using the Advantium as a convection oven, use the metal tray(s) or wire rack(s) specified for this oven. Put food directly on the metal tray or in the appropriate dish and place on the wire oven rack when baking or warming. On models with two wire racks, both racks may be used for two level cooking. Even when using the wire racks, the turntable support must always be in place when using the Advantium.
Any metal or non-metal oven safe-dish can be used during convection cooking; however, do not use the glass or white ceramic tray as it can affect cooking performance and could cause the tray to crack. The Owner's Manual covers the proper cookware in detail.
Convection cooking tips:
- Metal pans are recommended for all types of baked products, but especially where browning is important. Dark or dull finish metal pans are best for breads and pies because they absorb heat and produce crisper crust.
- Place food directly on the metal trays when cooking unless the recipe requires a dish.
- Shiny aluminum pans are better for cakes, cookies or muffins because they reflect heat and help produce a light tender crust.
- Glass or glass-ceramic casserole or baking dishes are best suited for egg and cheese recipes due to the cleanability of glass.
- When baking on one level, use the lower wire rack. The top clips are to only be used in two level baking.
Caution: The oven and door will get very hot when speedcooking, convection baking, broiling, warming or toasting. Cookware will become hot. Oven mitts will be needed to handle the cookware.
